做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
