做法:春笋切(qiē )成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧(shāo )热(rè ),倒入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右(yòu )。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
