做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒(dǎo )入2勺油,放入(rù )生(shēng )姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时(shí )候加(jiā )入(rù )盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
