做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快(kuài )熬干的时候加入盐(yán ),翻(fān )炒均(jun1 )匀稍(shāo )收汁时(shí )盖上锅盖焖。
