做法:春笋(sǔn )切(qiē )成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入(rù )少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时(shí )盖(gài )上锅盖焖。
