做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖(gài )大火煮开(kāi )后(hòu )转中火。煮(zhǔ )到水(shuǐ )快熬干(gàn )的时候(hòu )加入(rù )盐,翻炒(chǎo )均匀稍收汁时(shí )盖上(shàng )锅盖焖。
