做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅(guō )盖大(dà )火煮开后转中(zhōng )火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖(gài )焖。
