做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入生抽(chōu )、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清(qīng )水半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖(gài )焖。
