做法:春笋切成(chéng )片后加(jiā )少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火(huǒ )煮(zhǔ )开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上(shàng )锅盖焖。
