做(zuò )法:春(chūn )笋切成片后加少许(xǔ )盐捞出后(hòu )用清(qīng )水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
