做(zuò )法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上锅盖焖。
