做法:春(chūn )笋(sǔn )切成片后加(jiā )少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
