做法:春笋(sǔn )切成片后加少许盐(yán )捞出后用清(qīng )水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩住春笋,盖上锅(guō )盖(gài )大(dà )火煮开后(hòu )转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上锅盖焖。
