做法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽(chōu )、蚝(háo )油翻(fān )炒均匀,加(jiā )入少(shǎo )量(liàng )清(qīng )水半掩住春笋,盖(gài )上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
