做(zuò )法:春(chūn )笋(sǔn )切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火(huǒ )。煮到水快(kuài )熬干(gàn )的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
