做(zuò )法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生(shēng )姜切(qiē )片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒均(jun1 )匀(yún )稍收汁(zhī )时盖上锅盖(gài )焖(mèn )。
