做法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝(háo )油(yóu )翻(fān )炒均匀,加入少量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后(hòu )转(zhuǎn )中火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收汁(zhī )时(shí )盖上锅盖焖。
