做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水浸(jìn )泡(pào ),生姜切片,葱切成(chéng )段(duàn )。锅(guō )烧热(rè ),倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
