做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀(yún ),加(jiā )入(rù )少量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
