做法:春笋切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水(shuǐ )半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
