做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加(jiā )入(rù )盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
