做法(fǎ ):春笋切成片后加少许盐(yán )捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩(yǎn )住春(chūn )笋(sǔn ),盖上锅(guō )盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
