做法:春(chūn )笋(sǔn )切成片(piàn )后加少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖(gài )上锅(guō )盖(gài )大火煮(zhǔ )开后(hòu )转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒均(jun1 )匀稍(shāo )收汁时盖上锅盖(gài )焖。
