做(zuò )法:春笋切(qiē )成片后加少许盐(yán )捞(lāo )出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍(shāo )收汁(zhī )时(shí )盖上(shàng )锅盖焖。
