做法(fǎ ):春笋切成片后加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生(shēng )姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时(shí )候加(jiā )入盐,翻(fān )炒(chǎo )均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
