做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
