做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
