做法(fǎ ):春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛(niú )肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开(kāi )后(hòu )转(zhuǎn )中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅(guō )盖焖。
