做法:春(chūn )笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡(pào ),生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水半掩住春笋,盖上锅盖大(dà )火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均(jun1 )匀(yún )稍(shāo )收汁时盖上(shàng )锅盖焖。
