做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
