做法:春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少(shǎo )量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
