做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清(qīng )水浸泡(pào ),生姜切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
