做(zuò )法:春笋切成片后加少许(xǔ )盐(yán )捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
