做法:春(chūn )笋切成(chéng )片后加少许盐捞出后用清水浸泡(pào ),生姜切(qiē )片(piàn ),葱切成(chéng )段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
