做法:春笋切(qiē )成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入(rù )少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
