做法(fǎ ):春笋切成片后(hòu )加少许盐捞出后用(yòng )清(qīng )水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻(fān )炒均(jun1 )匀稍收汁时盖上锅盖焖。
