做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右(yòu )。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干(gàn )的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅(guō )盖焖。
