做法:春笋(sǔn )切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱(cōng )段翻炒1分钟(zhōng )左右(yòu )。再加入(rù )生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
