做(zuò )法:春笋切成片后加少许盐捞出后(hòu )用清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切成(chéng )段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
