做(zuò )法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬(áo )干的(de )时候加入盐,翻(fān )炒均(jun1 )匀稍收(shōu )汁时盖上锅(guō )盖焖。
