做法:春(chūn )笋切成片(piàn )后加(jiā )少(shǎo )许盐捞出后用清水(shuǐ )浸泡(pào ),生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
