做(zuò )法:春(chūn )笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量(liàng )清(qīng )水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
