做法(fǎ ):春笋切成(chéng )片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻(fān )炒(chǎo )均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖(mèn )。
