做(zuò )法:春(chūn )笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
