做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛(niú )肉片、葱段(duàn )翻炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
