做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后(hòu )转中火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
