做(zuò )法(fǎ ):春笋切成片后加少(shǎo )许(xǔ )盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的(de )时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
