做法:春笋切成片(piàn )后(hòu )加少许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
