做法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量(liàng )清(qīng )水半(bàn )掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
