做法:春笋切(qiē )成片后加(jiā )少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟左右。再加入(rù )生抽、老抽(chōu )、蚝(háo )油翻炒均匀(yún ),加入少量(liàng )清水半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
